Put the lentils in a small pot with 2 cups of water. Cover and bring to a boil. Then crack lid, reduce the heat, and let it simmer for 5 minutes. Drain. I had about 1 1/2 to 1 3/4 cups of cooked lentils. I then used it all and placed it in a food processor. Depending on how chunky you like your apples, you can also add them to the food processor. Add together cooked lentils, apples, brown sugar, oil, and eggs. Stir, blending well together. Then add cinnamon, allspice, cardamon, vanilla, flour, and baking soda. Stir until well blended and then scoop into a well greased muffin tin. Cook at 350 degrees for 30 minutes or until a knife inserted comes out clean. My recipe made approximately 18 muffins. ENJOY!
