Goodie4U Date Delights...

​Now Goodie4U likes to try out a new recipe too.  Because who knows better what is good for you than her?  Especially when this delight is gluten free, dairy free, and in this case, no sugar added.   

Goodie4U is also known for sharing these easy-peazy type of cookies as these don't require cooking either.  Just make them up and store them in the freezer. 

The Ingredients:  32 ounces of regular pitted dates  (NOT Medjool dates unless you want it really sweet)  -- coconut -- 9 ounces of pitted dried prunes.

 


​Goodie4U adds roughly a cup of dates (she made three mixtures out of the 32 ounce bag of dates) and about 1/4 cup of prunes.  (Again, she divided up the 9 ounce bag to make three batches of these delights.)  Nothing else was added.

​Next she places the dates and prunes mixture into blender or food processor.

​Once blended, she drops small amounts into a bowl of flaked coconut and roll them around.  By rolling it around in the bowl instead of your hands, one can get more coconut in the middle of the ball as well as the outside of it.  Once rolled, then place in freezer.  Freeze for at least an hour.
